On the 13th of May in the year 1806 the Balance & Colombian Repository published an article with the earliest known definition of the cocktail ‘Cocktail is a stimulating drink, made of all kinds of spirits, sugars, waters & bitters’.
This marked a defining moment & a spirited revolution that transformed casual drinking into a craft of precision and creativity. Inspired by this pivotal point in history, the founders of a unique venture decided to pay homage to this transformative year, and thus, '1806', one Melbourne’s most prized cocktail bars was born.
Our founders, Lisa Kelly, Sebastian Raeburn & Elizabeth Green were passionate historians and mixologists at heart who dreamt of creating a haven for fellow cocktail enthusiasts. They envisioned a place where each drink served was a tribute to the rich, timeless tradition of cocktail crafting. Today, nestled in the heart of Melbourne, stands 1806 - an emblem of that vision, a beacon in a sea of Melbourne bars, standing apart in its dedication to the art and history of cocktails.
